what you all recommend for the best way to begin assembling a list of places to research. What should I look for in each program and how can I find that information?

The internet is a good place to start. Just simply look up program home pages. Although the US News and World Reports listing of the top 50 ortho programs has little to no bearing on the quality of "residency" programs, I used that as a template for some of the programs that I wanted to research on the net. You can request info directly from the program. Last, but not least, ask the residents/attendings/4th year students who are done with the process which programs they think are the best. . . . . .you'll find that the same 10-15 programs keep coming up. You can use that info to research programs too. Also search old posts on orthogate.
