What do you guys think about updating programs on changes to your application/CV? Since submitting my ERAS in mid-September, I've had some papers advance from merely "submitted" status to "accepted for publication" and also added a few presentations to my CV. Should I email my programs and let know?
Sounds like you've had a busy couple of months. I think the answer probably depends on what your app/CV looks like already: if you've had a publication/presentation or two, then padding it with additional references is unlikely to make much of a difference to most programs at this point, especially if you've already been offered interviews.

On the other hand, if you're trying to gain acceptance into a research-heavy program or if you're taking a research year (where you'd be expected to get some pubs) then you'd probably be better sending them an update... but if you do, make sure you're tactful about it so that it doesn't come across as CV padding but rather honest updates.
