Keep trying. Talk to some of the recent applicants. They will be able to tell you who will give you some research opportunities. In my experience, doctors love to have med students to help with their research, but some are more likely to give you a good project with a high likelihood of publication while others are not that nice and will give you something with only a small likelihood. Either way though, research is research and the publication is the topper.
